fresh fruit creamsicle

This vegan, low carb, keto popsicle should be called DREAMSICLE -- only 5 ingredients and a dream come true for a hot sunny day. Number of Servings: about 6

  • 1 cup fresh or frozen fruit - raspberries, strawberries, or cherries

  • 5-10 drops stevia

  • 1 cup plain coconut yogurt (or whole milk plain yogurt)

  • 2 tsp vanilla

  • 1/4-1/3 cup real coconut milk (or whole milk or half and half)

    Place all ingredients except milk in a blender or bullet. Blend. Then add milk slowly to blender as needed (different fruit types have different water contents). Mixture should be thick like frozen yogurt. Make sure ingredients are smooth. Pour into six popsicle molds. Freeze for 2-3 hours. If you have leftover mixture, drink it slowly and happily.
