
Low carb fried rice
This is a vegetarian and cauliflower-free “fried rice” recipe that is inspired by the Indonesian dish Nasi Goreng. Now you know what to do with all those broccoli stalks that you used to throw away! Number of Servings: 2 (if you double the eggs)
3 cups broccoli, riced
1 small onion, chopped
1 garlic clove, minced
1 stalk green onion, chopped
1 tsp freshly ground coriander (trust me, fresh is best)
2 T coconut oil
3 eggs
1 cucumber, sliced into medallions
salt and pepper to taste
Optional: fried shallots and chili oil
Preheat your skillet to medium low heat with 1 tablespoon coconut oil. Rice the broccoli stalks in a blender or food processor, until chopped finely. Set aside. Add onions, garlic and coriander to skillet and lightly fry until golden brown. Now add the broccoli. Cook 5-7 minutes or until broccoli is tender, to your preference. Add salt and pepper to taste. While broccoli is cooking, fry three eggs in separate pan, with 1 tablespoon coconut oil. Once ready, serve the broccoli mixture on a plate or shallow bowl with eggs on top and sprinkle green onion. Garnish with sliced cucumbers and chili oil (and fried shallots if you have them).
