Savory Squash Mash With Bacon & Sausage

Do you miss mashed potatoes because they spike your blood sugar? Miss no more! This recipe was adapted from The American Diabetes Society (they used carrots and cilantro). Number of Servings: 2

  • 1 lb butternut squash, cubed

  • 1 lb ground sausage (or plain ground meat)

  • 7 strips of bacon (chopped)

  • 2 T butter or ghee

  • small handful of fresh basil leaves

  • 2 tsp lemon juice

  • salt and pepper to taste

Place cubed squash in pot of boiling water. Cook for approximately 10 minutes until tender. Meanwhile, sauté the sausage in one pan while the bacon either cooks in another pan or in the oven (at 350). Once squash is tender, drain. Then pulse in blender, adding butter, salt, pepper and lemon juice, until desired consistency. Once meat is cooked, chop bacon into bits. Scoop squash mash into bowl or onto plate, then sprinkle with bacon and ground meat. Garnish with fresh basil leaves or chop and mix into mash. Serve and chow down!
