fresh fruit creamsicle

This vegan, low carb creamsicle recipe is a dream come true -- only 5 ingredients!

  • 1 cup fresh or frozen fruit - raspberries, strawberries, or cherries

  • 5 drops stevia

  • 1 cup plain coconut yogurt (or whole milk plain yogurt)

  • 2 tsp vanilla

  • 1 tsp coconut sugar

    Place all ingredients except coconut sugar in a blender or bullet. In a small bowl, add a teaspoon of boiling water and dissolve sugar. Then add to blender. Mix on high until ingredients are smooth. Pour into six popsicle molds. Freeze for 2 hours. If you have leftover mixture, drink it slowly and happily.
