BAKEd chicken and veggies recipe

WATCH THE COOKING DEMO HERE! This cheap and easy recipe gets you three meals in one baking dish!

  • 6 chicken thighs

  • 1 cup chopped purple or white radish

  • 1 cup chopped butternut squash

  • 1 cup chopped zucchini (larger chunks)

  • 1/2 cup chopped onion

  • 3 garlic cloves, minced

  • your spice mixes: 1 - rosemary, 2 - cinnamon and cumin, 3 - smoked paprika

  • salt and pepper to taste

    Preheat oven to 400. Sprinkle salt and pepper in empty casserole dish. Place chicken thighs in dish and top with more salt and pepper. Add chopped radish, squash, onion and garlic. Then add your first spice rosemary to the top of two chicken thighs. Then your second spice combo cinnamon and cumin on two more thighs. And lastly, sprinkle smoked paprika on the remaining thighs. Place dish in oven, uncovered, for 40 minutes. Now add the zucchini. Check chicken and bake for 5-10 additional minutes. Once fully cooked, place each set of spiced chicken in it’s own tupperware and save your three meals for a busy day!
